Hungry Girl Cooking

I’m a hungry girl most of the time. I’m not going to pretend I don’t like to eat or that I don’t like to eat good things. Sure I will try new stuff like raw sprouts or meatless meals or a myriad of other health conscious foods. But that doesn’t mean that I don’t like GOOD food.

Enter Hungry Girl.

Right before I moved into this temporary apt with my friend I decided I would use my spare time to learn how to cook for myself. Of course I wanted to learn how to make healthy foods so I bought a Hungry Girl Cookbook that so many people raved about. I was a bit suspicious of the cookbook and cooking in general, given my past experiences making terrible concoctions, but I was ready to give it a good effort. I’m so thankful I did.

I’m thankful because I learn how to make delicious and healthy chicken tenders, or Fiber-ific Fried Chicken Strips as Hungry Girls calls them.  It is pretty easy, quick, and definitely delicious.  I never thought about using a cereal for breadcrumbs.  Genius!

The picture above shows all the ingredients used for the recipe.  I ended up using a bigger pan to cook the tenders because I had a lot more chicken strips than what is shown in the picture.  The ingredients:

  • 6 oz raw skinless bonelss lean chicken breast cut into 8 strips
  • 1/2 cup Fiber One bran cereal (the original kind)
  • 1/4 fat free liquid egg substitute
  • 1/4 teaspoon garlic salt
  • black pepper to taste

Since I went shopping the other day I had all of the ingredients ready to go!  All I had to do was preheat my oven to 375 degrees, grind the Fiber One to breadcumb consistency (with garlic salt and pepper), coat the chicken with egg substitute and then the Fiber One mix.  After that I just had to cook them in a baking pan (sprayed with nonstick spray) for 10 minutes on both sides.  They came out hot, crispy, and delicious

Fiber-ific Fried Chicken Strips.  Mmmm.  Maybe I will be able to cook some things after all.  I <3 Hungry Girl so much!  I’ve tried a few of the other recipes and so far this is my favorite besides the english muffin pizzas.

The cookbook I am currently using is Hungry Girl: Recipes and Survival Strategies for Guilt-Free Eating in the Real World.  I highly recommend buying it if you want to make healthy, low cal meals and snacks.

There is also Hungry Girl: 200 Under 200: 200 Recipes Under 200 Calories which I have heard is amazing.  I’m going to buy that cookbook next!  I can’t promise I will ever be a great chef, but I’m having fun trying new things!

Ooooh, those look like they turned out really well! They look delicious. I may have to buy the Hungry Girl cookbooks eventually.

If you like that try her mozzarella sticks, same concept but low fat string cheese. soooo tasty!

Yum! Yum! I’ve heard of using cornflakes to “batter” the chicken, but not a healthy cereal. What a wonderful idea. My five (5) boys would love these, and so would I!

Yeah I’ve heard of using corn flakes too, but never fiber one. Its a fab idea. Added fiber and same crispy goodness!
