The title of today’s post was fun because it was literally just listing every ingredient in the dish. Just call me a champion food blogger.
Last night I made myself a quick dinner with ingredients I had on hand that I thought sounded good together. Pasta and salads both seem to work that way – just throw some trusted ingredients together and it will most likely taste good. It’s pretty helpful when you’re looking at a pantry that still hasn’t been restocked since coming back from a work trip.
I started with half a box of pasta I needed to cook and pesto since I’m out of other sauce options. Pesto is one of those things that is in my kitchen or I’ll make it occasionally… but I really don’t use it often. It’s one of my favorite special sauce options for both pasta and pizza.

- 1/2 box pasta
- 12 oz green beans
- shredded chicken
- 1/4 cup pesto
- 2 tbsp minced garlic
- salt & pepper
- parmesan optional

Steam those green beans! Steamed veggies are awesome.
Cook pasta according to directions! I timed it so green beans finished and then one minute late the pasta was done. Add them together in a bowl.
Get out the pesto and minced garlic. I love the squeezable garlic that keeps in the fridge.
Add in the pesto and garlic.
Mix it all together! Add chicken before mixing ideally, but I clearly forgot and added it post mixing. Mix it up again so chicken is coated.
I ended up adding some parmesan cheese on top and it was perfect!
The amount I made was enough for several meals so I’ve eaten it twice already and still have at least one more serving.
The whole thing from start to finish took me about 15 minutes. Quick and easy meals like this are starting become a staple for me. It helps to be able to make things that are quick on days like that where I have work, business work, and then a late volleyball game. It is also great because I’m trying to save money up right now so the more meals I make at home instead of going out to eat the quicker I’ll get to my big savings goal.
