Banana Bread (Recipe and Pics)

This was my first attempt at making banana bread.  As far as baking goes I’ve never made anything other than cakes and cupcakes.

But we had overly ripe bananas so I figured I would use them to make something yummy on Sunday.

I searched for a simple recipe with stuff I already had and found a good one on Sparkpeople.

BANANA BREAD

Ingredients

1/4 cup butter
1 cup sugar
2 eggs
3 large bananas
1 1/2 cups flour
1 tsp baking soda
1 tsp nutmeg  (I used 1 tsp of vanilla instead!)

Directions

Makes one standard loaf size, approx 12 servings (slices).

Cream butter and sugar. This was the first time I have ever done that so I had to look up directions online for how to do it, which I then sort of followed because I used a fork to mix instead of a mixer. It took longer but was more satisfying. It turned out well!

Add beaten eggs and bananas.

Add sifted flour, soda and vanilla (or nutmeg…. vanilla and baking soda is a fun reaction!).

Mix well.

Pour into greased loaf pan. I added nuts to the top as well.

Bake at 350F for 50 minutes. Toothpick inserted into center should come out clean when loaf is done.

Voila! Everyone who had a piece said it tasted good. For my first try it was great!

I LOVE banana bread!! Looks good! When I cream butter, I generally heat it up for a few seconds in the microwave first, or leave it out for a while from the fridge. Just as long as you don’t melt it. It makes it easier to cream. To me, baking is so much more fun than cooking. :)

You’ve inspired me to make Banana bread! I’ve had to find another recipe as I don’t have any butter and only two bananas. I’ll let you know how it turns out. :)
