Sooo many pictures today! So much food? Yes. Let’s begin.
Breakfast: one egg and one egg white scrambled plus a small bowl of some kiwi version of raisin bran
Mid morning I ate another small person bowl of raisin bran. I love the small bowls Kepa’s family has. At some point I need to do a size comparison so you guys can see how big/small they are.
For lunch I used some black beans because WE FOUND THEM! It was a bit hard to find just plain black beans where we are but we found them in Countdown in the “healthy foods” section. The only way to get black beans without some crazy sauce in them is to buy organic, which is something I’m a fan of anyway.
To get some different texture I added cauliflower to the beans. It was raw and crunchy. To that I added salsa and laughing cow cheese to put in lettuce cups! Also had a small apple.
It looks so pretty doesn’t it? Well, it wasn’t the best thing ever. So my pretty food didn’t match up with the taste. It was decent, but not something I’m completely in love with.
Continuing the organic food theme, our almond butter we buy is organic.
It’s so good! But I was looking at the ingredients after opening it today and all there is in it is almonds and sea salt. We are going to start making our own almond butter if that’s all there is!
I had a banana with two spoons of almond butter and a half glass of skim milk for my snack.
We went to the gym before dinner to join and get a short workout in. 20 minutes on the elliptical woohoo!
Then for dinner we had steak, green beans, and potato wedges.
I gave Kepa half of one of my steak pieces and a wedge or two. Even though the green beans were too salty for my taste I wanted to eat them all and more. I need more green foods in my life.
After dinner we went out for coffee and I ordered a green tea to drink while I was reading.
The green tea was infused with jasmine and I really didn’t like it. Normally I like green tea but I’m not a fan of this particular one with the jasmine in it.
Then we ended up staying up late so I had yet another snack! Half a peanut butter and banana sandwich, cheese, and milk. At least I got enough dairy today. ;)
And now it’s past my bedtime. ;)
What’s your favorite way to use black beans? I love a simple eggs and black bean breakfast or black bean burger.

I actually make a black bean egg taco for breakfast sometimes. I take 1/2 cup black beans and heat them in the microwave, then use a fork to mash them up. Then put 1/4 cup spread each of two corn tortillas, fill with cooked egg whites, jalapenos and salsa.
Can you tell I don’t mind spicy for breakfast?!
Oh wow that sounds delicious. I love spicy for breakfast too. I’ve gotta buy some tortillas and make these.
Oh, I adoooooooooooore black beans. I started eating black beans with scrambled eggs for breakfast when we traveled in Latin America- mostly Guatemala, and I became obsessed. I LOVE black beans. Also black bean soup. YUM YUM YUM. (great recipe: Mollie Katzen’s black bean soup)

I don’t like green tea. I know its healthy but im not a fan..except for when im at someplace like a japanese or chinese restaurant. But when I make it myself, its gross. I never buy and eat black beans. I like them, but I never really eat beans at home. I had black beans sat nite in my burrito. Usually ill eat them in a burrito or as a side dish at a mexican restaurant..and that’s pretty much it.
I could eat black beans by the spoonful! I love adding them to rice, quinoa, lettuce wraps (like you did!) veggies, anything basically!

I’ve never really tried eating black beans at home before, but I have a recipe for black bean burgers I’ve been meaning to try. Those lettuce wraps look yummy.
I manage to find a lot of whole food stuff at Bin Inn (http://www.bininn.co.nz/) for decent prices. They have bins of cool ‘whole’ stuff like quinoa and beans and nuts in help-yourself bins. Bigger jars of almond butter, too. Although making your own sounds cool. I just don’t own a food processor :(
