Carrot Cake Smoothie Recipe

I saw a recipe for carrot cake smoothies somewhere in my search for green smoothie recipes the other day. I wish I had saved it so I could link there, but unfortunately I didn’t bookmark it! What I made is slightly different anyway, so it’s just as well.

CARROT CAKE SMOOTHIE

7-8 baby carrots

1/3 cup skim milk

1 frozen ripe banana

1/2 tbsp peanut butter

1 tsp cinnamon

Use a food processor or blender to cut up the carrots. Add the rest of the ingredients and blend till smooth.  I added 1 tsp flax seed on top of it when it was finished. Pour it in a glass and enjoy! Or, if you are like me, and don’t have any clean glasses, use a bowl!

I really enjoyed this! I thought it was so fun in color too.

I am going to make this tomorrow morning! Will definitely add the flaxseed like you did plus switch out the skim milk for almond milk. Great addition to our protein pancakes for Sat AM breakfast! Thanks!

I need to try almond milk eventually. It was in a lot of recipes but I’ve never had it before! Hope you enjoy it! :)

I love carrot cake! I was excited when I saw you mention this on twitter, but now im less excited because peanutbutter makes me sick. So I think I will stick to the solid cake instead, cuz that makes me feel happy. Lol.
Do you think that flax does anything? Its in my morning cereal (ezekiel 4:9 cereal). I def feel better eating that in the morning, but I don’t know that it has anything to do with flax, or just cuz its all protein and healthy in general. Hmm.

HAHA! You could use almond butter. I think that might taste better. I love almond butter and it’s not at all like peanut butter’s taste. I don’t think.

And yeah, real carrot cake is better. I’m going to make one soon.

Flax is just a source of fiber. It’s good if you don’t eat enough fiber from other sources, plus it’s insoluble fiber.

well, my roomie is allergic to almonds as well as peanuts so i wouldnt want to get the blender all nutty cuz those things are hard to clean. i eat fiber gummies every day and i always feel healthier when i do (and theyre yummy).

I think I might sub a little Greek yogurt for the peanut butter just to cut some calories but keep the protein (that might also help Merri’s peanut butter issue), but this looks sooooo amazing! I think adding flax would taste great–it would give it an extra nutty punch.

Also, some studies have shown that cinnamon helps your body process carbs! Bonus! :) Thanks for sharing this Mary!

That’s a good idea. I normally use greek yogurt in my smoothies but I’m out of it right now so it didn’t even cross my mind.

I made this earlier this morning without the flax of cinnamon and it was SO GOOD!! Even made my dad drink some and he almost liked it til I told him there was carrot in it.
