Chicken and Asparagus Pasta

This morning I woke up late, after sleeping forever, and decided to eat some sugar!

Jk. Just decided to get the poptarts out of the way so I won’t eat them after today. Going back to no sugar, but don’t want to waste them. So I ate them. ;)

For lunch I had a tuna sandwich with some yogurt. I wasn’t sure about the yogurt because it was past the experation date, but I ate it anyway. I’m still alive now and not sick, so I guess it was okay.

I actually cooked dinner – GO ME!

I got the recipe from SparkPeople, my new favorite place ever.

CHICKEN AND ASPARAGUS PASTA

INGREDIENTS

3 cups whole wheat extra wide pasta
12 spears asparagus
1/2 chicken breast, bone and skin removed
1-1/2 cups fresh mushrooms, pieces or slices
1/2 cup low sodium chicken broth
1 tbsp extra virgin olive oil
1/4 cup feta cheese, crumbled
1 medium tomato
Pinch of pepper, red or cayenne

Ingredients, FEb 18

DIRECTIONS

Cook pasta according to package directions.
Meanwhile, cut chicken into bite-sized cubes and place in skillet with olive oil.
Cook until partially done.
Add asparagus and mushrooms, continue cooking until chicken is done.
Add chicken broth and cover pan, cook until asparagus is crisp tender.
Add pasta, red pepper flakes (to taste), and feta cheese. Remove from heat.
Serve with fresh diced tomatoes to garnish. Enjoy!

My mom and I both ate it. She said it was really good, but I think she just appreciated someone cooking for her. the pasta wasn’t cooked right (I’ve never cooked pasta before!) and came out sticky. I also forgot and added all the pasta instead of just part, which meant there was too much. Other than that it was really good. The chicken and veggies were cooked perfectly. So in the end it wasn’t all that bad.

That’s so awesome!!!! So proud! I mean I know you can cook, but I don’t know. It’s just really cool!

No more scrambled egg sandwiches? ;)

Haha. Next time we are together I will be a really good cook!

I am going to try new things for breakfast. Then I’ll come back to scrambled eggs sandwiches when you are around. ;)
