Chicken Salad On A Pineapple

This morning there was a miracle in my kitchen.  I actually cooked something.

Well, it was just scrambled eggs, but it was something!  I also ate half a bagel with whipped cream cheese but that doesnt take away from the fact that I cooked something for breakfast!  On the stove!  I probably should have cleaned the skillet first, but since I didn’t my eggs turned out all ugly like.  Oh well.  Gives them character.  Of course, I eat my eggs with ketchup so it doesn’t really matter what color they are.

Then after breakfast I ate the other half of the bagel with whipped cream cheese.

I didn’t get a chance to eat a proper lunch, so I just ate some greek yogurt with the nutty granola.

But this time the greek yogurt was vanilla flavored!  This might not mean anything to you, but it was great!  I discovered I actually like greek yogurt if it’s flavored.  I hated the plain kind which is why I was mixing stuff into it.  But a little flavoring goes a long way in making me like it.

For dinner we ordered food from Demos’ Restaurant in Murfreesboro (where I’m staying for a night or two).

I ordered the Chicken Salad, which came on half a pineapple.  That’s right.  Chicken salad on a pineapple. Best idea ever?  Maybe.

I really love pineapple if it’s been a while since I had it last, and this pineapple was delicious!  As was the chicken salad (which btw is not diet food).  I ate all of that a few grapes (saved the rest for tomorrow) and the bread.  The salad part was not very appealing so I skipped it and then had an extra piece of bread.  Yummy bread!

Demos is SO DELICIOUS. I’ve probably ordered that pineapple-filled-with-deliciousness about 30 times. I miss Nashville.

I read in a magazine that you can cut half the calories in chicken or tuna salads if you mix in a full serving of salad greens and sub in mustard for half of the miracle whip. I tried making it, skeptically, and it was actually really good.

Yeah, I like Demos. Good place.

You can make chicken/tuna salads with less calories. Restaurants just don’t do it. ;)

I love pineapple! We eat it fairly often, the canned kind, mixed in with our usual stirfry type dinners. Or when I once in a while make my yummyyummy pineapple upside down cake.
I think that some skillets arent supposed to be cleaned, because theyre seasoned? Youre just supposed to scrape them. But I dunno. We have the nonstick frying pan that we use at home.

Yeah some skillets are like that but the one I was using isn’t, I was just lazy. Haha.
