Chickpea Salad Recipe

My eating the last few days has been out of control. And I haven’t been blogging my food. I’ve noticed when I don’t blog (which is just my silly way of forcing myself to track it all) I just eat anything I want. I just eat anything available. I’ve got to stop that and start blogging it again, especially until I figure out my new eating stuff.

But I did want to blog about something I made yesterday that was oh so good!  It was a chickpea salad type deal. I basically just looked in my pantry and grabbed everything I could and see what I came up with based on some recipe ideas mixed up into something good.

CHICKPEA SALAD RECIPE

Ingredients

1 can chickpeas, drained and rinsed

1/2 cup canned carrots diced

1/2 cup onion diced

1/4 red pepper diced

1/2 cup broccoli diced

(even though I say diced I just mean cut up… I have no knife skills)

1/4 cup lemon juice

1 tbsp olive oil

1/4 cup fresh cut parsley

Directions

Mix the chickpeas, carrots, onion, pepper, broccoli together in a boil.

Mix the lemon juice, olive oil, and parsley together and then pour on the other ingredients.

Mix it all up. Eat right away or chill it in the fridge for a while (I liked it better after sitting in the cold for a while).

And enjoy! I really liked this and my mom did too. I’m thinking I could possibly eat some more vegetarian meals if I just get off the bad eating track I’m on currently. Probably need to drop sugar again. But anyway, this is a good recipe I will use again!

It looks pretty! And yummy…I just tried chickpeas for the first time this month and I really like them. Don’t know what I was afraid of before.

how long do you have to boil them? i like chickpeas a lot. but i dont really know how to cook them. Havent had them in years. Those or lentils… I used to eat both a lot right out of college when i barely ate meat. but i have no idea how i cooked them because i cant remember. lol.

I actually didn’t cook them at all, just used them straight from the can.

ooh so theyre already cooked when theyre in the can, liked canned veggies, and you just heat them up. that sounds easy. no wonder i was able to do it before. lol.

Yeah they are preboiled when they come in the can, which is what I used. I guess you would need to cook them if you got them fresh.
