For breakfast I had a little something different. Ate ketchup with my eggs:
And had one slice of toast with peanut butter and banana on it.
Here’s my lunch, except I only had a few bites of the apple (it wasn’t good) and only once block of the cut cheese.
For dinner I was the chef and I had planned to make pasta but had felt like I’ve been on carb overload lately so I wanted a salad. I made a great salad, sort of based off this recipe from Recipezaar:
Ingredients
- 2 cups mixed salad greens (I use leaf lettuce, endive and radiccio)
- 1 cup dried sweetened cranberries
- 4 ounces crumbled feta cheese
- 1/2 cup walnut pieces, toasted
- 1/2 cup cooked chicken pieces
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon ground black pepper
- 1/4 cup extra virgin olive oil
Directions
Toss greens, cranberries, cheese and walnuts in large bowl.
Mix vinegar, honey, mustard and pepper with wire whisk until well blended.
Gradually add oil, whisking constantly until well blended.
Pour over salad; toss to coat.
Serve immediately.
Really my only change was to have chicken in it. I looked up the recipe only because I’m terrible with matching dressings to salads. This dressing worked really well. Next time I try coating the lettuce first then add the rest at the end. Even so it came out really well – I loved it.

This was one of the best salads I’ve ever had. And the ONLY salad I’ve ever eaten for dinner and not had something else with. Fantastic, my love :) You should be chef more often ;)
Oh, and that was goat’s milk cheese, rather than feta :)
