Green Chicken Salad and Green Beans

I believe when this post tweets it will be my 15,000th tweet. Is that crazy or what? I love Twitter and I’ve met so many awesome people there as well as getting to know a lot of bloggers better. I have a facebook page but sometimes it gets neglected in favor of Twitter because Twitter is awesome!

Anyway…. on to the food!

Breakfast this morning wasn’t anything new or groundbreaking. I had a bagel with half cream cheese and half almond butter as well as some scrambled eggs.  I ate only half of the cream cheese side bagel and the rest of everything else.

For lunch I didn’t know what to make so I just started looking around the kitchen. I saw the shredded chicken and decided a chicken salad would be delicious. I used light mayo, greek yogurt, avocado, and craisins. I also put in a tiny bit of red peppers just to use the last slice of red pepper available.

After mixing it all up the mixture was quite green! I used half an avocado and that was enough to turn the whole thing a cute mint green. It’s hard to tell in the photo, but it was green. I ate it over a bed of mixed salad greens, which is my favorite way to eat tuna or chicken salad.

I also had an apple with a glass of water after I finished my chicken salad.

This afternoon Kepa and I went to the mall and airport after he came home from school. Of course I didn’t buy anything at the mall but it was nice to go again and see what kind of stores they have available in case I do need something (highly unlikely unless my luggage never shows up!). I also really liked going back to the airport. We went because I needed to exchange all my American money for Kiwi dollars, but I enjoyed seeing the airport again. I much prefer the Auckland airport to the Memphis airport. ;)

For dinner we had steak, potato wedges, and green beans.

I absolutely love green beans. I love them when they are still crispy and fresh tasting like these. I used to hate green beans because the only way they were ever served to me was as cut up mushy things. I’ve never been a fan of anything that’s mushy and that way of preparing green beans put me off them for years. But eventually I realized green beans can actually be delicious and I’m glad I did!

Yum that Chicken Salad is going on my to-do list to try! I buy those Crasins a lot but haven’t thought to get creative like yourself :)
Glad you’re enjoying the shopping – has Kepa taken you to Sylvia Park? It pretty much has all the shops!

There’s nothing like fresh green beans, our family has grown them for years. I like to cook them up in my wok in olive oil and garlic. Yummah!!

Wow. I have 12,434 tweets. I use both fb and twitter..altho its easier to tweet at work. Fb is more for keeping tabs on ppl I know in real life, and twitter is more for random. Mm sounds good. Craisins and avocado actually go well together. I have them in my sandwiches I make for lunch. (I had craisins in my cereal/yogurt/milk this morning!) I like green beans but I don’t love them. When I was growing up, we grew them in the garden. They are soo good fresh off the plant, warmed from the sun, and raw. Yum. The only problem is, a bean plant makes a lot of beans! So at first we’d have them for snacks, and cooked at dinner, but after a while, there were SO many green beans, id get sick of them day after day. Esp since not everyone in my family would even eat them. Also, that’s a lot of beans to snap. My favorite are french cut green beans, if I’m going to buy them. I never really have them nowadays because my roommate doesn’t like them and I don’t love them enough to get them for just myself.

Growing up in Tennessee, we pretty much always had the southern mushy style of green beans, too. I feel in love with green beans after moving to California nearly 14 years ago after I had them steamed for the first time. YUM!!

I love green beans, as long as they are prepared well. There is nothing worse than canned, nasty ones!
