If you’re like me, you hate making lunches for yourself. Why can’t food just appear in front of you when you want it? And when you do get food that’s prepared, it’s bulked up with carbs and has hardly any protein. Well, I have the solution: Pre-made soup + shredded chicken.
Today, for lunch, I took a chicken noodle soup that was 156 kcal, 3.6g fat, 19.8g carbs, and 11.1g protein and added 150g of shredded chicken. That took it up to 403 kcal, 8.9g fat, 19.8g carbs, and 57.6g protein.
DAYUM.
It’s a VERY simple idea, but it’s so tasty and good. Here’s why: the shredded chicken you usually get in supermarkets is kinda dry because it’s been in refrigerated air. Add moisture… boom. There’s not a lot of carbs in the soup, there’s already some protein, it’s tasty. Add more chicken… boom.
It makes you feel fuller, longer. It actually feels like you’ve eaten something rather than just had a warm drink. And another tip? Add some more frozen veggies in before you heat it up!
Now, when someone actually makes a protein soup, that will be a happy day.

Ohh this is SUCH a good idea. I’m trying to think what fish this would work with…..Maybe cod? Hmmm
Cod is a good meaty fish. If you’re thinking about the environment, though, maybe consider another as cod has been overfished, I think. Monkfish is a really meaty substitute that would hold up well, I think.
Love this idea. I teach and the half hour lunch break doesn’t leave time to compile a delicious lunch and I get bored. I’m trying to cram in more protein but it’s hard, and expensive, especially not eating meat. I like the concept of taking something premade and chucking a couple of extra things in it. Cheers.
Also gotta say I’m so jealous of living with someone who’s got the same goals, teamwork rocks!
