Laughing Cow Cheese Rocks

Another day of sickness here, although I’m slightly better thankfully. Hopefully in a few more days I’ll be able to breathe again and won’t be coughing at all. One can only hope. ;)

This morning for breakfast I had eggs with pepper and a slice of toast with no sugar added blackcurrant jam.

Mid morning I ate a plum.

For lunch I made a yummy dish with my favorite things: salsa and laughing cow cheese. Ingredients: brown rice, shredded chicken, salsa, broccoli, spring onion, anda wedge of laughing cow original cheese.

When mixed up it doesn’t look that appealing but it’s sooooo good.

It’s funny that I made this for lunch because a little while after this my friend JoJo told me she bought Laughing Cow because of this blog!

My favorite Facebook transaction today! I love Laughing Cow so much that I’m happy to recommend it to others and even happier when they love it to.  It always makes my day when someone buys something or visits a restaurant because I liked it. I know I do that based off my friends recommendations, but it’s extra cool when you are a blogger. ;)

Kepa’s mom made us dinner (awwww). She made fish which was nice and spicy, baked potatoes, and spinach.

I also ate another half of a small potato. I ate sour cream on the potatoes and salt too. I’ve started using a little bit of sea salt sometimes when I eat eggs and potatoes and things like that. BAD HABIT. I barely use any but it’s still not a good road for me to start going down.

After dinner Kepa and I split some chocolate and drank milk. Well, no sugar chocolate. ;)

I’m weening myself back off sugar. After having some almost every day of being sick I started craving it again. (Well, also it’s the time of the month when I crave chocolate…sorry if that’s TMI) So I had some of this today and tomorrow I’m going to try not having anything sweet. AH. Why must the sugar be so addictively good and problematic for me? Why can’t I be a normal eater?

I finished watching The Office episodes today so I moved on to watching 30 Rock. I guess I’ll just work my way through all of those now. It provides a fun distraction from blogging/job searching. ;) I feel sometimes like instead I should be going out and meeting more people and stuff but then I remember I need to save my money for the wedding/trip back to the US. Sacrifices? Well, it’s totally acceptable right now while I’m sick. I’m just waiting until it gets warm and sunny so I can go play outside. ;)

Food was pretty standard today, besides the chocolate. Compared to my sick person weekend eating this was a wonderful change.

Aww! Lovin’ the love! Glad we were both such a good part of each other’s day. I had two triangles already! Would have been three but I somehow resisted… for now. There are still a few more hours into the night, lol!

I think that it sounds a tough transition to be sick and have this huge life move-new country,new living situation,new non distance relationship status(and living with the future inlaws,no matter how sweet-yikes!!!) and be looking for work while probably a teeny homesick.

You are a strong cookie(excuse the sugar reference ;) and as the famous quote says,
“This too shall pass”.

Hang in there and hoping a nice little job floats your way.With all the changes it is easy to seek comfort foods.

I would be interested in a post on how you find your eats/actual meals have changed from what you would make back home. Are the portions the same?
Enough veg? Did you eat scrambled eggs every morn back home?Eggs are great but every day that can add to cholestrol levels.Is all this huge change in your life affecting your health at all?

Take care Mary and remember to always look after yourself,emotionally as well as physically(and wouldn’t it be great if you and Kepa could escape for a few nights somewhere alone…camping or something?) All the best-you are swesome ;)

I definitely had a bout of homesickness the other day when I was really sick and called home and just wanted to be there. But I’m doing better now – less sick and less homesick. ;)

I will post about that. I didn’t eat eggs every day at home only because I was too lazy to cook them. I’m pretty lazy with breakfasts. I did eat eggs every day when I was working at Green Mountain because the chefs made them. That didn’t seem to affect my cholesterol much at all. Plus Kepa has started doing more egg whites, so I worry about the cholesterol bit even less.

Portions are actually smaller than what I was eating. I’m eating a lot less than I was when I lived at home because I’m not eating out of boredom nor am I eating because I’m “hungry” (not physical hunger).

I don’t think my eating here has affected my health negatively. I’m sick because it’s winter and colds/flus are going around. I’m not at all surprised I got sick, just annoyed that it stuck around for almost a week so far.

I would love to go away with Kepa…camping would be fun… just have to wait for warmer weather. ;)

Ooops I didn;t mean you were sick cause of your eats…I just wondered how your health was in general terms?

My summer has been up and down-up because I have done lots of hot yoga that me feel peaceful ,flexible and happy…..also lots of family visits and too many treats-ice cream,fish and chips,wine etc which all make feel plump and
bleh!Ah the pitfalls of summer gatherings on my waistline!

Those were some pretty good eats to make a sick person better. You’ll be back on track in no time.
The chocolate…well, it looks pretty dark so it’s STILL good for you. YAY!

“A normal eater” that isn’t addicted to sugar? AHAHAHA. Hehe. I’m pretty sure that sugar addiction IS normal ;) (But I know what you mean. It’s frustrating).

I LOVE laughing cow cheese! I have been having it since I was a little kids, when they were tiny cubes… I may just have to go buy some now!

Side note: I’m from Canada, and everything (EVERYTHING!) has both French and English on it… when I was little I always thought Laughing Cow cheese was La vache qui rit… which is what it is in French, I had no clue it was called Laughing Cow cheese until I was in High school… I still feel compelled to call it that!

Laughing Cow is one of my favorite things ever – last night I had a creamy light swiss wedge and some cracked pepper triscuits – so yummy!!! I agree with you – salsa and Laughing Cow is like THE BEST combo ever!!!

I love Laughing Cow cheese. I learned of it from my friend Lisa. It is amazing on a Turkey sandwich.

Love laughing cow. When I lived in Switzerland they had laughing cow apericubes and it’s the same stuff just in little cube size w the silver foil wrapper. So cute and so good! Needless to say I could eat the whole package ;)

Laughing cow cheese or even low fat cream cheese is great in veggie soups to give it a bit of protein and creaminess! Try a vitamin c dump to beat the end of your cold/flu, should knock it on the head :-)
