Protein Pancakes

I had a good start to the morning – I made Janetha’s protein pancakes!

Included in the pancake batter:

  • 1/2 cup old fashioned oats
  • 1/2 cup fat free cottage cheese
  • 1/2 cup egg whites
  • 1/2 scoop protein powder
  • 1 tsp vanilla extract
  • cinnamon + sugar mixture

The pancake itself had so much protein! Since it needed a bit more healthy fat I added a tablespoon of peanut butter on top. As well as a tablespoon of maple syrup because that’s what pancakes deserve.

These were actually so good! I expected to be grossed out because of the cottage cheese, but you can’t tell what’s in the batter once it’s  blended. That tasted just like I want a pancake to taste, especially with the peanut butter and maple syrup on top. I think these will replace my favorite oatmeal protein pancakes recipe.

The complete recipe ended up being 550 calories 11.6 g fat, 59 g carbs, and 49.6 g protein. Woah protein! These really are protein pancakes. I didn’t eat all of it – I couldn’t. I was full about 2/3 of the way through and will probably stay full for a while.

I love these protein pancakes! I’m so glad I tried them!

Yea I love these. I always eat the other half later in the day for a snack. I think the cottage cheese is what actually makes these pancakes. Nice and creamy. Yum.

Totally! I’m glad I gave cottage cheese another chance because apparently it can make some things taste amazing!

Mary, they look yummy. I saw you said the entire recipe was 550 calories…….do you happen to remember how many it made? The pancake in your picture looks pretty big, so I’m wondering if that is the entire recipe or did it make more? Also, I hate cottage cheese so my first instinct is to not like this recipe, but if you cant taste it, I might give it a try. :)

Another question, different topic: What are some of your go-to snacks after a hard workout? I just started jogging and need some ideas of good snacks to have to replenish myself after a good sweat session. lol :)

That recipe made that one big pancake. I tried to make smaller ones but it just blended together into one big one because the batter is thin. The 550 number also included maple syrup and peanut butter. So if you used less calorific topics then the number would drop a lot. But I tend to have bigger breakfasts so this worked for me. :)

Also, I hate cottage cheese and have never liked to eat it but this recipe is awesome! Once you blend you don’t even know it’s in there!

Hmmm. I don’t know about what to eat after jogging. I normally only eat after weight lifting and then it’s something with some protein and a bit of carbs and fat.
