Okay, this was a complete experiment.
I love me some stuffed chicken breasts so I figured I would try to cook some different variations. The smart thing to do would be to get recipes off the internet but instead I just decided to throw whatever I could find in the kitchen.

I seasoned the chicken with garlic powder, pepper, salt, and chili powder. Then inside I put cottage cheese, salsa, and rotel. And on top I added a bit more cottage cheese and salsa. Then I baked them uncovered for 30 minutes at 190 C.
I wasn’t sure if it would work out but it did and I rather enjoyed the stuffed chicken with some roasted broccoli on the side.

They were really good but I can definitely improve this by
- adding more cottage cheese
- less chilli powder as it was a bit too spicy
- covering it when baking
And that would make something delicious!
I can’t believe I used to hate cottage cheese and avoid it at all costs. I’m still not eating it by itself just for fun but I find it is delicious in many dishes. It started when I made protein pancakes with cottage cheese and since then I’ve been working it into my diet more.
It’s one of the few forms of dairy I still eat and only because I eat small amounts cooked into regular meals for extra protein. It bothers me a bit when I eat too much but like chocolate I find it’s worth it. Within reason. Bah, being lactose intolerant sucks sometimes!
Anyway, this salsa stuffed chicken was great with some roasted broccoli. Will definitely repeat and improve this soon!
