Special Chickpeas and TWO Apples

I just realized that blogging my food takes forever, even on a short post. There are so many steps to the process! Even though it’s a lengthy process I enjoy it and I like being able to track my food and see patterns and also experiment and eat healthy things. Hurray blogging! You are my favorite!

For breakfast yesterday I ate an apple and a half bagel with peanut butter and marionberry jam.

And that blue water bottle? That’s my gigantic water bottle I generally keep around me so I can guzzle all day. Yay water! :)

Then for lunch I had my Chinese food leftovers! Mmmm chicken and rice. I think I like Chinese leftovers the best of any leftovers. Not sure why that is exactly, but it’s true.

For my afternoon snack I decided to try a recipe I’d seen on Angela’s blog for chickpeas and peanut butter. Sometimes when I’m looking at food blogs something crazy or different or just delicious catches my eye and goes on my list of things to try. I finally got around to doing this one, probably because it’s quick and easy. Just mix up some peanut butter and syrup then mix it into the chickpeas! Simple!

I really liked it too! I just ate it by itself but you could try it on toast or something. I normally just eat chickpeas in salads so I never thought of that combination with chickpeas but it’s good. I suppose I like it because I love the peanut butter +syrup combo. That’s how I eat all my pancakes and waffles, so it reminded me of that.

For dinner I packed my food for work (aww, last weekend of my temp fun job), so I wouldn’t eat stuff there. I made some tuna with grapes and brought crackers for that, plus carrots, and another apple. Yes, I ate two apples yesterday. Mmm, apples.

All in all it was a really good day! Today I’m going to go buy some lettuce so there will be more greenery around here shortly. I miss green when it’s not in my posts!

I like chickpeas so many different ways. Right now my two favorites are probably roasted and smashed up with a little soy mayo and pesto.

Love the water bottle. Desperately trying to find one in the UK. Where did you get yours from? I wonder if they would ship it over?

I got mine from Big Lots! I never shop there but went in one day with a friend who does and saw it for only 1.50 and I had to buy it. I love it!

I’e been daily food blogging since March & it’s quite time consuming but so worth it.

Chinese is always just as good the next day, it’s like pizza!

Definitely time consuming, but I enjoy it. And maybe if a few of y’all read it it will even pay for some food!

I love tuna and grapes. It’s the only way I like tuna now. ;)

I have not had chickpeas in yrs. Maybe I will this week. I used to have a yummy tomato chicken chickpea recipe that I discovered in hs or college, I forget. Its probably lost. I probably havent eaten them since right after college. What a shame.
