Stuffed Peppers

Kepa and I love eating tacos. The fact that we eat tacos twice a week now is more of less my influence on our eating habits, but I can’t say I regret it!

After showing Kepa how I make my taco mixture he perfected the recipe so that we can make it and portion it out and already know the calorie count and nutrition info. Helpful! We make it with ground beef, red kidney beans, mixed frozen vegetables, and spices.

Usually we just eat it with light tortillas or sometimes I use blue corn chips for nachos. But the other night we decided to go healthier and try it in bell peppers. The recipe was a major success!

We cut out some red and yellow bell peppers and stuffed them with the taco mix. Baked in the oven for thirty minutes after that for a perfect dinner along with some guacamole and spicy blue corn chips!

Okay, actually the dinner wasn’t perfect. It tasted great but there was just too much food. I got full after eating one pepper’s worth of food and I also grabbed too much guac. Next time I’ll probably cut my portions down by at least a third. Intuitive eating helps in that way – you notice when you are full and can act accordingly.

This is definitely a recipe we will be repeating – I loved the stuffed peppers. It also adds more veggies to the dinner which is always a good thing. :)

looks good. red and yellow peppers are my fav. i had lamb tacos on sat nite at home they were yummy.

Those look amazing! What veggies mix and spices do you use? I’m always looking for ways to change up taco night from the same thing every week.

We use beef, red kidney beans, frozen mixed vegetables (whatever you have would work reallly, I also like to throw in things like zucchini), and a half packet of pre made taco seasoning. Basically we make it as easy as possible!
