Good day of food today!
Around lunch time I decided to slice up some leftover peppers we had along with a couple small peppers and roast them.

I see packages of little sweet peppers at the store all the time and this is the first time I bought them (because they were reduced for quick sale). I thought roasting them might be nice and I was completely right – they were great!

I added the mix of roasted peppers to my chicken sandwich at lunch.

The peppers were sweet and crunchy both because the edges and tips burned a bit. It added a nice flavor and texture to the sandwich.

The sandwich fixings:
- Avocado
- Light mayo
- Chicken
- Spinach
- Roasted peppers
- Whole wheat bread

It might not be the best sandwich ever but it was definitely the best sandwich I’ve had in a while.
Then for dinner I had the best unwich (made with lettuce instead of a bread): a taco unwich!

I guess technically this would have been an unburrito. Since I used the lettuce cup to wrap the taco and salsa mix like a burrito. But unwich sounds better, doesn’t it?
Anyway, I loved this! I have done lettuce cups in the past (chicken & corn lettuce wraps) but this is the first time I’ve subbed lettuce for tortillas and it was a great choice. I think from now on I will do tacos as either stuffed peppers or lettuce wraps. So much better!
I’m so satisfied with today’s food and great discoveries. Roasted peppers and lettuce wraps are awesome things!

Ive been reading ur blogs for awhile..do you really only eat one unburrito? Id be starving after that
You read my blogs so you’ve seen days where I record everything I eat. It’s not like I’m starving myself. ;) In this particular case I did eat just one unburrito and then ate another small meal again later, but normally I would have two at dinner with lots of salsa and guac and maybe a side dish too. This particular case ended up being where I wasn’t really hungry at dinner time so I only ate one and then a few hours later I did get hungry (one won’t keep you full that long!) and ate again. But yeah, hard to judge on a day where it’s just random photos of *some* things I ate. ;)
That lettuce trick is a good one hey. I try not to add a carb to my dinner but if I make falafel I’ll wrap them in lettuce with some hummus. It’s a really tasty alternative to pita bread and because I don’t fry the felafel they can be a bit dry so water loaded iceberg works a treat.
I can’t believe the effort you put into a sandwich! Bet it was tasty!
