For breakfast I had eggs with salsa and some leftover steak and potatoes from last nights dinner warmed up in a little salsa. Deliciously spicy breakfast.
Then for lunch Kepa and I made something we found in a grocery store (Countdown) magazine here in New Zealand: Tuna, Corn, and Sweet Potato Frittatas. It turned out really well so I wanted to share the recipe.
Tuna, Corn, and Sweet Potato Frittatas Recipe
Ingredients:
- olive oil spray
- 250g sweet potato, peeled and cut into 1 cm cubes
- 5 eggs, lightly whisked
- 1/2 cup milk
- 425 g can tuna, drained and flaked
- 300 g can corn, drained
- 1/4 cup spring onion
- 1/4 mozzarella cheese, cut into 1 cm cubes
- 1/2 grated cheddar cheese
Directions:
- Preheat oven to 390° F
- Cook sweet potato in a saucepan of boiling water for 5 minutes or until tender then drain.
- Spray 8-12 (their recipe said 8, ours made 12) muffin tins with olive oil or other cooking spray.
- Line the bases with non-stick baking paper.
- Combine the eggs, milk, tuna, corn, spring onion, and mozzarella cheese in a bowl.
- Season with salt and pepper.
- Add the sweet potato.
- Stir gently to combine everything.
- Divide the mixture evenly among the muffin tins:
- Sprinkle the grated cheddar cheese
- Bake for 20 minutes or until golden and set.
- Let cool a few minutes and then pull out and serve.
- Goes really good with hot sauce, a mayo based sauce, or Tuimato sauce. ;)
I ate three of them, and Kepa ate eight. HAHA. But it could definitely serve four people. These are really, really fun to make and so delicious.
Dinner was a less exciting event: we had a normal dinner of chicken in pitas with lettuce and mong beans and a spicy homemade salsa.I took a photo with two, but I only ate one of these:

Then after dinner we went out for coffee and I had a hot chocolate and a slice of cake. That was my second sugary snack of the day as we went out earlier and split some sweets too. After all this I realized I’m done with sugar. It tastes good but it makes me miserable and totally throws my body off after I eat it. I just feel miserable after eating so much sugar for several days. So. NO MORE.
All in all I’m glad today’s over. I thought yesterday I was all better and had beaten my cold but today was a miserable one on that aspect. I just can’t wait til I can breathe easily again!

I’m completely over sugar, sure, I won’t turn down a poptart, m&m or larabar but I refuse to add it into anything
Those fritatas are so cute, like little muffin meals. My day yesterday was ok. Bored at work, but then went out to my friend’s bar/club nite which was sort of interesting. Today I’m excited its Friday. Its so cold cant wait to get in my jammies under some blankets!! Hope you feel better. Oh, and tuna..my favorite way to eat tuna is in sushi. Or, pan seared ahi tuna.
Those frittatas look great! I don’t like tuna, but my husband loves it. I have to remind myself to make him tuna noodle casserole when it gets chillier outside.
