Yogurt Mess and Lots of Exercise!

This morning I ate two eggs scrambled at breakfast with Kepa.

And then mid morning I made a snack that was so good I want to make it every day forever.

It was 3 tbsp greek yogurt, 2 tbsp muesli, 1 tbsp almond butter, and 1 tbsp blackcurrant no sugar added jam.

Mix it all up for a nice twist on pb&j that’s pretty looking and yummy.

I considered posting mid morning just because I loved my yogurt mess snack so much. But I decided against it just because eggs and yogurt aren’t that exciting to deserve there own post. I see now how it would be possible to blog three times or day if you are just blogging about food/what’s going on in your life. Easy. Well, maybe not if you have a full time job. But with no job? Easy. Speaking of jobs… I hope I find something to do with myself soon. Maybe I should just make working out my job in the meantime… ;)

For lunch I used a cup of leftover black beans with some shredded chicken over spinach and lettuce topped with 2 tbsp of dressing.

It was surprisingly good considering how simple it was. I didn’t feel like chopping up lots of veggies to make it a proper salad, but definitely wanted the lettuce/spinach for some green goodness. And since the black beans and chicken were cold everything was a cold refreshing treat.

For my afternoon snack I ate a plum while reading the Rebel Fitness Guide from Nerd Fitness.

After that I ate half a banana before I went to the gym. I wish I had eaten more because it was NOT enough. I ended up doing a Body Combat class which I hadn’t planned on and it was rough because I was hungry and didn’t have enough energy. I finished the class but next time I plan on doing an intense class like that I’ll make sure I’m not hungry when I go.

For dinner i had fish, spinach, and two potatoes with light sour cream.

I really should have eaten more green and less potato for dinner. But the spinach was so not my thing tonight. I had to force even that tiny bit down.

After dinner I had the other half of my banana with a tbsp of almond butter on a slice of bread with a glass of skim milk. Yummmmmah.

I’ve decided to start counting calories for a few different reasons, but I’m not sure if I want to share them on the blog. I did that before and it was…weird.  Do you have any thoughts on whether I should share or not? Would you like that or no? Or does it not matter?

Exercise today: 20 minutes stationary bike, 10 minute walk, 20 minutes elliptical, 1 hour Body Combat class

Dang that’s a lot of exercise considering I’ve been doing hardly any lately. I love it though because I feel so good now. :) I feel bad for Kepa because he got stuck with a crappy trainer and he was hoping for someone good to set him up with a program. Funny though, because even though he hasn’t done much with weights he still knows more than half the trainers. Smartypants. ;) So far I’m liking the gym but I want to start going in the morning too and see how it is then. Hopefully it’s not as crowded so I can do some weight training. At night it’s pretty packed and hard to find space.

And that’s it! It’s my bedtime soon so hopefully I’ll go to sleep happily after all that activity and a little bit of carbs before bed. Perfect recipe for sleep.

Do you mix things with yogurt? The almond butter + blackcurrant jam + muesli was my perfect combo. Loved it.

That yogurt mess is one of my favorite breakfasts..especially on the go. I have a variety of jam flavors that I do it with to change it up :-)

I also use yogurt for savory things like in chili.

I was wondering about that litty bitty spinach and then you commented on it! Ha!
I’m not too big on cooked spinach…I prefer it raw I think: in smoothies and salad.

Counting calories on your blog might be helpful for you to look back at, but I’m not sure I care either way. Be well!

Haha. I didn’t make the dinner so I jsut ate what I was given. I’m starting to really not like cooked spinach either. It’s okay fresh but I’m having trouble stomaching it when it’s cooked. I might have to eat something else.

Your eggs always look sooo yummy! Can you share your recipe? My scrambled eggs always turn out much more dry and not half as appetizing looking as yours!!

Kepa makes them so I’ll ask him to come around and tell you what he does. He cooks them way better than I do, mine are drier too.

your yogurt mess looks like ice cream with delish toppings – YUM!

I think counting something is good to get a baseline of where you are. Points, calories, servings/portions, whatever. My dietician has suggested me counting servings instead of calories — she said counting things like “1 serving meat” and “2 servings grains” is a good way too think of things. That way, when in comes time for dinner, you can reflect and may find you haven’t eaten any veggies or not enough fruit.

Either way, I think most people underestimate what they are actually eating vs. what their body needs.

That sounds good. I don’t really count anything and I’ve been doing fine, losing a pound a week even without much exercise. And I’m still eating the same way now, just tallying up the calories at the end. Not sure that’s how it’s supposed to go, but that’s what I’m doing. I would hate to try calculating the calories before every food decision I made.

You only should share if you feel like it is a topic you want to discuss or would bring something special to your readers. Don’t share to justify doing so. I think calorie counting is a great tool to losing weight. The important thing is to not let it be overwhelming or to consume you.

I have kind of conflicting thoughts on calorie counting, but I am going to start counting calories myself since I need more of an awareness of how many overall calories Im eating a day. I say do whats best for you. If you want to share to give people an idea then do it, if you have reservations then dont!

Share them if you want, or don’t. I just like looking at the food. But it’s your blog, so..
that yogurt thing looks weird. Its probably good but I don’t think I could ever eat almond butter and jelly together, just because it would psychologically remind me of eating peanut butter and jelly. What is body combat? That sounds like it could be fun! Or ouchie.. Yes, ive been eating vanilla yogurt (nancys), fruit (usually strawberries because we have tons of them at the house) and my ezekiel 4:9 cereal every morning. Its very good. I had a roommate who made really yummy cooked spinach using soy sauce and garlic… I love spinach in any form, but I know sometimes cooked spinach can get a lil bitter.
