I’m on a kick where I eat the same meals over and over. I like to make something I can eat multiple times a week and have leftovers too. You know my dinner favorite is fajitas.

My Breakfast Egg Sandwich
Lately I’ve been eating the same breakfast every morning with slight variations.
Egg, cheese, and vegetable sandwich.
Yep. Every morning! I love making a breakfast sandwich each morning! It’s super easy, filling, healthy, and a good source of everything you need for breakfast. It’s currently my favorite way to start my day.
Vegetables & Egg Breakfast Sandwich
I’ve been adding vegetables to my sandwich lately because it’s an easy way to get another serving of vegetables into my day. At first it seemed like a strange idea but after a few tries I realized it made the sandwich so much better! The layers of flavor and texture are really delicious.
My favorite combination is adding roasted peppers and onions to my egg breakfast sandwich. I obviously love eating those flavors so adding them to breakfast was a natural extension.
Another great thing to add to an egg breakfast sandwich is spinach! Fresh spinach tastes delicious and is a great way to add veggies to your breakfast. It gives your sandwich a fresh taste and feel.
Sometimes it’s been half a breakfast sandwich. One slice of wheat toast with 2 eggs, some type of veggie, and a bit of cheese. This is pretty easy to make and works well as an open faced sandwich. It comes in under 400 calories and keeps me going for a long time. Sometimes I’ll add a small apple to the side if I’m still hungry.
It doesn’t take terribly long to make this breakfast since you only need to cook the egg and vegetables. It’s also pretty easy to eat on the go if I happen to be headed out for the morning. It’s working for me right now and I’ll keep eating it until I get tired of it (which will happen eventually). I know it will always be one of my backup breakfast options though because it’s tasty, healthy, and filling!
