After a weekend of eating out and having lots of celebration meals (Happy Father’s Day to the fathers out there!), I knew I wanted to come home tonight and do some meal prep for the week.
Cooking up at least a couple meals on Sunday is one of the easiest ways for me to have a healthy and less expensive week, so I was happy to head into my kitchen to make a couple things for the week. My favorite concoction? This chicken with sweet mini peppers and onions!
It was a simple ingredients list:
- chicken breasts
- sweet mini peppers
- white onion
- crushed red pepper
- fiesta seasoning fajita
- lay chicken in pan
- dice onion
- cut up mini peppers
- layer onions and peppers over chicken
- season with salt, pepper, red pepper, and fajita seasoning
- bake at 350 F for 30 minutes
After it’s done it comes out looking and smelling oh so nice!
Seriously, it’s one of the most simple things ever but I’m so excited to eat these for lunches!
I packed these meals away in some tupperware to take for the week. It’s not a pretty dish with gorgeous presentation but it is a great time and money saver for me. It will make my work days a lot easier knowing I already have food ready and don’t have to make something that morning or go out to eat.
I’m happy to have settled into my new living space so that I can start doing more meal prep like this. I’d like to make a few different things to take for lunches and always have something done!
