I’ve been eating the same exact thing, or a slight variation of it, almost every night since I’ve been back in Memphis. It’s quick, easy, tastes good, contains vegetables and I can easily calculate the nutritional information.
It’s fajitas!
I always used to order fajitas at Mexican restaurants. I never thought I could make a version of it myself but relatively recently I talked myself into trying and I’ve been hooked ever since.
I start with onion, red pepper, and green pepper. After those are cooked I add in the meat and heat them both together. Sometimes I’ve cooked both of these in advance and am just reheating. Like I said, it’s easy (my main goal most nights).
Then I load up my tortillas with the mix and lettuce, salsa, tomatoes, jalapenos and sometimes refried beans. It varies slightly each night depending on what I have on hand but the basics never change. I only ever used turkey or chicken and pre-measure the amount of meat I include to make it easy.
I’m not sure how authentic these are (read: probably not at all) but they work for me. I enjoy the combination and it’s usually 500 – 600 calories and really filling. It’s the perfect dinner for me which is why it is a favorite that is in constant rotation these days.
I’ve found making the same things over and over saves me a ton of time and effort. More importantly it saves me a lot of thought which helps as a recovering compulsive overeater/binge eater. The less I think about food the better (which is why I don’t really food blog anymore).
Anyway, I’m actually off to make dinner right now. Any guesses as to what I’m having? ;)
They look delicious. I love making fajitas they are easy yet filling thing to eat. I love adding different veggies to change it up.
That’s actually a great idea to add some different veggies. What do you add? I might try out some new veggies in my mix to keep it entertaining.

I’ve used a pre made fajita spice mix, and also just a mix of stuff I put together on my own. I wrote it down at home but I figured out what to include by just googling fajita spices. :)

YUM! Growing up in Texas Fajitas were one of my FAVORITE dinners my mom would make. That smell of peppers and onions cooking…yumm-o! They should make that into a perfume!
P.S. Shredded zucchini is so good in fajitas too because zucchini really absorbs spices. It’s usually super cheap in the summertime too.
Um that is the best idea ever. I didn’t even think about zucchini but its one of my favorite vegetables! I can’t wait to try that!
