Food: Breakfast Oatmeal with PB2 & Chia Seeds

oatmeal with pb2 and chia seeds recipeI’ve been on an oatmeal and coffee kick for breakfast lately. I’ve thoroughly enjoyed the oatmeal creation I’ve finally settled on and happily have eaten it every morning to start my day. It’s a great breakfast with lots of fiber and protein and it tastes great too. Perfect for a chilly morning!

Since I’m loving the oatmeal so much and all of the ingredients are things you might enjoy too, I figured I’d share what I’m eating!

I start with my favorite instant oatmeal ever: Better Oats Oat Revolution! Steel Cut Oats.

I bought these on a whim at Kroger because they were on sale at the time and I wants to try an instant version of steel cut oats. They ended up being a great buy as I love the flavor, texture, and quickness of the oatmeal. I’ve tried both the Apples & Cinnamon and the Maple & Brown Sugar. I prefer the maple version.

When the oats are finished in 2.5 minutes, I then break out my additional ingredient mixins.

First into the mix is a serving of PB2 powdered peanut butter.

I bought PB2 months and months ago. I bought it after seeing it on another healthy living blog. I thought it would be an awesome alternative to regular peanut butter because at the time I had been eating a lot of peanut butter and banana combos. I made up the PB2, tried to use it like regular peanut butter, and HATED it. It got stuck back on the shelf and was promptly forgotten.

Since I’m currently in a save money/waste not phase I decided to try to use the PB2 again. This led to an experiment of mixing it into my morning oatmeal. I loved it mixed into the oatmeal! Personally it’s all about the texture and this way it tasted great by adding the peanut butter flavor but did not change the texture of the oatmeal.

After adding the PB2 I then mix in a serving of Fiber Smart Ultimate Chia Seed.

I previously avoided chia seeds cause I thought they were a bit weird, but my new roommate had some and suggested I try them. I did and realized I enjoy them mixed into oatmeal.

Once all the ingredients are in, I mix it all up and call it a meal!

It’s ridiculously delicious, filling, and inexpensive. I’ll probably switch back to eggs for breakfast soon since I can only eat the same thing so many times in a row, but right now I’m still loving this oatmeal for breakfast!

    I had not idea they made instant steel cut oatmeal. I’ll have to look for it next time I’m in Kroger.

    I made this same oatmeal mixture :) Oats, PB2, and chia. I also add a bit of jelly sometimes :)

    What i do love about oatmeal is that you can mix it with a lot of things and still make it delicious
