The last few weeks/months have been a blur of eating whatever was on hand at the moment, rarely working out, and just being rather fly by the seat of my pants. It wasn’t exactly the healthiest period of my life because I was focused on everything except my health and eating.
These days I’m getting back to a routine that is much healthier. A huge part of that is getting prepared and making choices ahead of time instead of waiting until the last minute.
- I’m eating 3 meals a day.
- I created my first weekly meal plan in months.
- I’m journaling my meals and feels as needed to follow the plan.
Sunday afternoon was spent getting me ready for the week. This Sunday prep is something I haven’t done in ages but it felt really good to spend a couple hours getting prepare for the week.
- I charged my Polar Loop to wear during the week.
- I laid out all my vitamins and Juice+ stuff for daily intake.
- I organized my room and got workout clothes ready.
- I made 2 healthy protein and veggie packed meals to last throughout the week.
I made turkey chili with veggies for lunches and an egg casserole for breakfasts. The kitchen smelled awesome yesterday while I was doing food prep! Plus I managed to do a week of food for like $10. Killer budgeting too!
I’m feeling prepared and ready for a crazy successful week even though it’s off to a rainy start. Sunday prep is back and it’s here to stay – it’s way more comforting to feel prepared for the week ahead than to feel frenetic and unprepared.

Based on your last post, I read Potatoes not Prozac and am giving it a try. What are your normal breakfast foods? Do you have a recipe for the egg casserole you made this week?

Hey Amy! I switch back and forth between a breakfast with eggs and steel cut oatmeal with PB2 and protein powder. I decided to make a egg casserole for this week to save time. I didn’t have a recipe, I just kinda through it together. Here’s basically what I did.
– Brown sausage, drain.
– Cook veggies in skillet (I use frozen veggies).
– Mix together eggs, cheese, and coconut milk with spices.
– Add sausage and veggies to egg mix. Mix together.
– Dump into greased (olive oil spray) casserole pan.
– Cook on 350 for 40 minutes until the eggs set.
– Cool and slice!
Not sure how well it will stand up to microwaving throughout the week so I might end up still frying or toasting it or something like that. We will see.
Good luck with the Potatoes not Prozac plan! I’m in the *building a routine* part so it’s not super exciting but it’s crucial to building good habits. I’ve noticed the protein at each meal really does help, I’m doing way better with emotional/anxiety stuff now.

So HOORAY for getting back in the healthy swing of things!! Also, holy WOW for getting a week of food made for just $10! That’s amazing! I typically spend about $50 a week…yikes. I’m slooowly preparing for the week. I got groceries yesterday, will wash dishes today, and then batch cook tomorrow. But I’ve got my week planned out, and that makes me feel organized, prepared, and like I can DO this! You’re SO right that a little bit of preparation is comforting!!

LOL, I was spending $70-$100 on food…. so I had to cut that shit down. To be frank that’s a killer way to spend way too much money! Things like chili are crazy cheap to make, comforting to eat, and can be made healthy. It’s not a full week either, just breakfasts and lunches. I still have to make dinners which will probably be another $10-$20 to get chicken and more veggies. But really I used to spend way too much money eating! I looked at my budget for what I spent last year and wanted to cry about it. Haha.

I LOVE LOVE LOVE my time in the kitchen on Sunday’s! I am shocked you spent $70-100 on food though a week; Carlos and I spend that, but that’s both of us :) I don’t eat out during the week so I feel okay spending money on grocery’s.

That was including eating out, which I was doing A LOT OF each week. I used to spend way less when I cooked at home more, but doing the irresponsible post-divorce thing I ate out all the time, ordered in, and bought really expensive groceries too. It was silly. LOL.

I started getting myself organized last week on Sunday too. I picked out 5 work outfits, ironed them (ugh), layed out gym clothes too. I always take my lunch (nothing nearby to tempt you otherwise which is a good thing!) and I set out my vitamins etc. too. It was such a good feeling to get up and not rush around trying to do those things in the mornings. I hope we can keep up our Sunday planning! Great job on getting your food budget down! I need to work on that.

My food budget has already dropped DRASTICALLY since the beginning of 2014 since I cut out most eating out and alcohol. It’s crazy how much I spent on food last year!

For my BF and I combined, I spend just under $70 a week on groceries. We eat well, but there’s not much wiggle room for treats, like ice cream, but that’s a good thing when you’re like me and have no self control! LOL I’ve been posting my grocery hauls lately on my blog with prices if you’re curious.
I also sat down and made a dinner meal plan through the end of the month, which really helps keep me on track. Was thinking of cooking some breakfasts ahead of time, but I have no end of time, so why bother?

I’ll check it out but it’s not like I don’t know how to shop and eat cheap… I just wasn’t cause it wasn’t a priority and that number included multiple meals out each week. If you only buy groceries and never get treats then of course it’s cheaper. :) Not sure why I feel like I need to make it clear, but I do! Haha. But yeah, I like grocery hauls so I’ll check that out and I might start doing them again too!
Meal plans are awesome, way to do it for the month! I can only do a week at a time but doing one for the month must be awesome.

LOL No worries. We almost never eat out. :-/ Its good and its bad, you know?
Planning out a few weeks at a time means I spend less time doing it (or it seems that way) and I can kind of plan my shopping lists mostly in advance too, which like.
I do usually manage to squeeze in a thing of ice cream every few weeks though! I think BF would go crazy otherwise!

I know. I seem to go through periods where I never eat out and periods where I eat out too much. Gotta work on that balance thing. ;)
Do you still shop weekly for stuff like produce?

I shop every Monday for 98% of my stuff, but occasionally I forget something and have to go back for one or more items later in the week. Most produce items will easily keep a week in the crisper drawers (or sealed up in baggies), and things like carrots still taste fine when cooked if they are a little old/slightly limp. Apples, if wrinkly but not actually bad or bruised, make for good applesauce. :) Really the only thing I have go bad if I don’t see it right away is green beans, which is why I usually buy them canned.
