Lunch is the most important meal of the day for me.
It’s also the meal I most often mess up. Since I work full time I have to cook and prepare a lunch ahead of time. Sometimes this doesn’t happen, sometimes I forget, and sometimes I just get talked into going out to eat. I’m weak, what can I say.
Part of my plan to achieve my weight and debt reduction goals for the year involves packing my lunches every day and sticking to it. I ordered a new set of EasyLunchboxes 3-compartment bento lunch box containers and a insulated lunch box cooler bag

I hope to do an ongoing feature called Lunchbox Diaries where I feature some of the better lunches I take to eat at work. It’s easier for me to bring my lunch every day if I change things up and don’t fall into a rut, so I will experiment with new lunches.
First new lunch: Chicken and Apple Stew!
This meal required some heavy prep work, but was simple to cook since it involved a crockpot. I made it the night before with some chopped some veggies. (Keep going for the recipe.)
After cooking I portioned out my serving for the next day into a microwavable bowl my mom gave me.
The next morning I packed my stew and an apple in my awesome new lunchbox.
Funny enough, even with the idea of this first Lunchbox Diaries in my mind, I FORGOT MY LUNCH AT HOME.
I drove halfway to work before thinking about my water bottle which made me realize I left it and my lunchbox on our dining room table. I made the choice to drive back home and get my lunch. I only live about ten minutes from work so it didn’t make me too late.
I had the soup today for lunch with some extra black pepper.
Since I really enjoyed it and so I’m sharing the recipe (it’s from something else adapted by my mom and further adapted by me).
Chicken & Apple Stew Recipe
Chicken & Apple Stew Ingredients:
- 1 lb chicken thighs
- 3/4 head of cabbage, shredded
- 7-8 whole carrots, roughly chopped
- 1 onion, chopped
- 2 granny smith aples, sliced in eighths
- 1 can (14 oz) fat-free, low-sodium chicken broth
- 1 can (14 oz) cream of chicken soup
- 1 cup apple cider (or apple juice)
- 1 tablespoon sage
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon garlic poweder
Chicken & Apple Stew Directions:
- Add all ingredients to a crockpot.
- Cook on high for 3-4 hours.
- When finished, shred the chicken thighs with forks and mix everything thoroughly.
Variations: Caramelizing the onions before adding them.
