Pancakes are a great way to start any morning. Fluffy, warm, and delicious, they are a treat that isn’t a normal weekday breakfast for me.
I had a good start to the morning – I made Janetha’s protein pancakes!
These protein pancakes taste great but are packed with protein.
Included in the pancake batter:
- 1/2 cup old fashioned oats
- 1/2 cup fat free cottage cheese
- 1/2 cup egg whites
- 1/2 scoop protein powder
- 1 tsp vanilla extract
- cinnamon + sugar mixture
The pancake itself had so much protein!
Since I wanted a bit more healthy fat I added a tablespoon of peanut butter on top. As well as a tablespoon of maple syrup because that’s what pancakes deserve. Pancakes and syrup go together.
These were actually so good!
I expected to be grossed out because of the cottage cheese, one of my least favorite foods in the wordld, but you can’t tell what’s in the batter once it’s blended.
The protein pancakes tasted just like I want a pancake to taste, especially with the peanut butter and maple syrup on top. I think these will replace my favorite oatmeal protein pancakes recipe.
The complete recipe ended up having great nutritional stats:
- 550 calories
- 11.6 g fat’
- 59 g carbs
- 49.6 g protein
Woah protein! These really are protein pancakes. I didn’t eat all of it – I couldn’t. I was full about 2/3 of the way through and will probably stay full for a while.
