Spaghetti Squash Spaghetti

I don’t like or eat spaghetti but last night I decided to make some…. with a spaghetti squash!

The spaghetti squash I used had been sitting in my pantry for way too long as I avoided it because I didn’t know what to do with it.  I finally decided enough was enough and I wasn’t going to let a vegetable intimidate me just because I hadn’t used it before.

I did a quick search and found out that I could microwave Mr. Spaghetti Squash. I poked a few holes and threw it in the microwave for 7.5 minutes.

Afterwards I had to cut it in half and remove the seeds. This was a weird process just because it was so stringy and sticky and looked weird to me.

After that step, you scoop out the fleshy stringy bits to use as your spaghetti. I through it into a skillet with some meat sauce.

All in all it was really easy and made plenty of food for several meals. I love that the spaghetti squash is low in calories and a healthy vegetable so I definitely plan to make it again. I’d love to try it with a pesto sauce or a healthy alfred sauce. I’m still not a huge fan of tomato based spaghetti sauces.

However, I am a new fan of spaghetti squash! It’s pretty useful in place of pasta. It obviously doesn’t taste like a real and delicious pasta, but it’s definitely a good substitute for a night when you want a lighter meal.

Have any of you ever used spaghetti squash? What’s your favorite way to use it? Give me ideas because I’m buying another when I hit the grocery store this week!

    I have been wanting to try this since I’ve seen tons of posts about it. I have to ask, what did you use to scrap out the “spaghetti”. My roommate bought one and cooked it up but decided not to turn it into spaghetti because she couldn’t figure out how to scoop out the flesh.

    I am curious how this would be with pesto or alfredo sauce as well, I get bored with standard tomato based pasta sauces.

      Scape it out with a fork.That produces the strands the resemble pasta.

    I love to make a breakfast hash with it…I cook my spaghetti squash in the oven, then i thrown two slices of bacon and an onion into a cast iron skillet. After those cook down, I put in the spaghetti squash. It tastes insanely good!

      Oh that’s an interesting idea! I didn’t even consider it for a breakfast food but that sounds delicious.

      If it wasn’t snowing like crazy, I’d be getting the ingredients for this recipe. Looks appetizing, esp with the artichokes.

    I like to cut it in half first then roast it in the oven. You get a really delicious nutty flavor that you don’t get in the microwave. Then we a. toss with butter, cracked pepper and Parmesan or b. toss with pesto. Really yummy!

      I almost did that but I was too tempted by the much faster option. ;) I always like to do acorn squash in the oven though.

    I am not the biggest fan of spaghetti squash, but it’s really an easy vegetable to cook and a great low cal option in place of pasta. My preferred way to eat it is with chicken and alfredo sauce.

    I LOVE spaghetti squash but i usually just eat it with tomato sauce and meatballs because i also love tomato sauce and meatballs too. :)

    After its cooked, I remove the squash and put it in a baking pan with a couple wedges of laughing cow cheese then cover it in Goya Black Bean soup and bake. SO GOOD!
