Today’s exercise was a walk with JuJu that got cut short when a loose dog attacked. Yes, ATTACKED!
It was seriously scary and poor JuJu got bit by the bigger dog that ran across the street to us. She ended up whining and I ended up seriously freaked out. Luckily the dog ran off pretty quickly and it didn’t escalate into anything worse. I’m a bit scared to walk around in my neighborhood now! I’ve been on lots of walks and that has never happened before but it’s enough to make me weary about hitting the streets again.
Maybe tomorrow I’ll hit the gym and throw the ball for JuJu in the back yard. Compromise?
For dinner I found a new way to use cabbage since every time we buy a head of cabbage it seems to last forever!
Pasta With Cabbage
Basically I made pasta with tomato sauce, chicken and cabbage mixed in. Easy and cheap dinner, obviously.
I consider cabbage to be a great “meal extender”.
Like meat extenders originally used to reduce costs then later used to add fiber, meal extenders are healthy elements that are part of meal that make it go further. They add nutritional benefits but don’t cost a lot of money or calories.
Cabbage is a great example of a meal extender. Spinach is another good meal extender which is why I like to add spinach to everything and make recipes like spinach and turkey enchiladas.
Meal extenders make meals healthier and keep the costs down!
It’s surprising how many ways I’m loving cabbage these days when I used to hate it. Braised cabbage, coleslaw, fried cabbage, cabbage in pasta, etc. Ever since I got the Green Lite Bites cookbook I’ve just loved using cabbage in different ways.
It’s probably one of my favorite vegetables right now. Cabbage FTW!
