There’s quinoa in my meatloaf! I made this turkey quinoa meatloaf recipe long ago, based off of my regular turkey meatloaf recipe. Variations of recipes I love are always fun… when they work out!
Adding quinoa to meatloaf was originally completely experimental. I didn’t know how it would turn out but it was a nice experiment that I want to try again soon.
I love ketchup on my meatloaf. ;)
Turkey & Quinoa Meatloaf
Turkey Quinoa Meatloaf Ingredients:
- 2 packages lean ground turkey (99% fat free)
- 1 cup oatmeal
- 1 cup cooked quinoa
- 6 egg whites
- 2 cups chopped spinach
- 1/2 onions
- 1 cup mixed bell peppers
- 1 cup salsa
Turkey Quinoa Meatloaf Directions:
- Mix all ingredients together.
- Add to baking dish.
- Bake at 350 F for 45 minutes (check your oven for exact times, mine is finicky).
- Remove, cool, cut into squares.
I loved this resulting “meatloaf” even though it was most packed with veggies and quinoa/oatmeal. Packed with protein too! It can be a little bit wet but I love that in my meatloaf personally. If you don’t then you can add some ingredients to soak up some of the extra moisture.
If you can’t tell, I really love turkey meatloaf. I also love putting veggies into my meatloaf. It’s like creating a whole meal with meat and veggies in one with this dish!
