Last night’s dinner was a successful one, so I want to share the recipe today. It’s a twist on the regular turkey meatloaf muffins I make all the time.
I’ve been obsessed with my blender, going so far as to make oat bran from oatmeal and blended up other things you wouldn’t think about in a tiny travel blender. The oat bran inspired me to try a new take on the turkey meatloaf and it worked out quite well!
While I love this recipe, it takes a ton of prep work! Dice the veggies, shred the zucchini, saute them, pull all the ingredients together. It just takes a ton of time to get ready.
Lucky that time is worth it because it makes many servings for me to enjoy throughout the week! It’s a great weekly meal prep food.
For this recipe, I tried a different glaze on the top of the meatloaf. I usually just top my meatloaf with ketchup but I combined a few more ingredients to give it a twist inspired by the recipe I worked from.
The end result was a nice meatloaf that stayed together and had a delicious glaze on top. It was packed full of veggies with every bite and made for a great dinner pair with salad. Totally plan on making this exact version again – it was moist but still held up.
It also made an entire house smell divine. I kept getting compliments on how great it smelled while cooking even from people who don’t like or eat meatloaf. The compliments continued during dinner so this meatloaf version is healthy and a hit. Win!
