Waterfalls, Asparagus, and Soap

Today was a gorgeous day in Vermont.  It was pretty enough and cool enough that our nutritionist decided to have class outside.   Great decision.

Speaking of cool… water aerobics in a pool in Vermont in Sept is not the best decision for a Southern girl used to heated indoor pools.  I dove in and almost froze, but I enjoyed it once I heated up a tiny bit to just above teeth-chattering cold.

But other than the freezing pool all outside activities were great.  Even class (someone should tell professors to go outside more often).

It was good to sit down and get a refresher course in basic healthy eating.  Since I enjoy reading on the topic I know a lot about it but getting it drilled into my mind isn’t a bad thing.  I love when something positive becomes so ingrained that you don’t have to think about the steps to make it happen.

Today was also my first foray into walking in Vermont.  Hello, beautiful countryside!  We walked along a road near a stream.  The soothing sounds from the water made the perfect combination with the shady tree lined road.  So beautiful.

And at the end of the little walk there was a waterfall.  A cute, little baby waterfall.

We hung out around the waterfall for a little while and then walked back.  It was a nice little introduction to the nature/walking/hiking aspect of the program.  I’m excited to get on the Appalachian Trail, even though it sounds a bit challenging.  That will be awesome.

All in all it was another good day.  I also went to make soap at a local soapworks shop.  Anyone ever made soap before?  That was very fun and I will have pictures later after I get my soap back tomorrow.

Also, starting tomorrow I might start blogging my meals and exercise.  I forget to take pictures of my delicious food but I write down what I eat and I track all the exercise I’m doing.  There is a super cool blogger named Janetha who has a great blog called meals and moves, so I’m kind of ripping off her idea because it is such a great one.  Look for that to start tomorrow.  We will see how long it lasts. :)  My dedication to doing the right stuff is very high but my dedication to blogging it all is thinner. Also, I’m going to start listing new “firsts” for me.

Firsts completed today: eating asparagus, and making soap.

Turns out I really like asparagus!  I never knew what I was missing.  Do you like asparagus?  What’s your favorite green veggie?

I’m excited to keep trying more and more new foods and activities.  There is so much fun to be had, even in veggieland.

    I love asparagus, I could eat a ton…that and roasted bell peppers, squash and zuchinni. Whenever I roast veggies I set off the fire alarm. I once lived in massachussettes. My husband and I used to go to vermont for day trips. It is beautiful there. I hope you are enjoying your time there.

    I think it is so cool that you are not only doing this camp experience, but you are still blogging about it! It’s really fun to read about your journey. :)

    I love asparagus… it’s probably one of my all time favorite green veggies. Welcome to the world with asparagus in it… it’s a much happier place that way. Keep up the good work… and writing about it!

    What a wonderful journey you are on!

    I LOVE asparagus. My bf lives near a farm that grows it and he brings tons of it to me in the Spring. I love to saute it in olive oil then add egg beaters to it for breakfast. If you eat a lot of it your pee will turn green and smell like asparagus! :-P

    I never started eating brussel sprouts until I was older. They are great with olive oil and a little salt.

    I love asparagus now, but I used to seriously dislike it when I was little… My favorite green veggie? I would probably have to say green beans.

    I LOVE asparagus. I love most veggies, but asparagus is one of the absolute tops.

    I kind of like the smell of my pee after asparagus. *shrug*

    I love asparagus, but it’s very expensive here, so we don’t eat it often.

    I like asparagus too, the pee thing doesn’t happen to everyone, it is a gene thing. I guess if you have a certain gene your pee will smell and it doesn’t if you don’t have the gene. Mine does, but I still like asparagus. TMI? haha

    The pics are beautiful. I am really excited for you. I think your goals are great and I am looking forward to you sharing your journey with us. I am going to try to up my weight loss over the next few months too.

    Hi there- I began reading you blog a few weeks ago and recently have wanted to comment alot! As I’m sure you’ve already found Vermont is an amazing place. I actually went to college at Green Mountain College- not far from where you are. The program your in looks wonderful- but it being in Vermont is the icing on the cake. It draws you in, grounds you,makes you take a step back and really think about your needs vs. wants in life, and makes you look deep in yourself and see the beauty in everything- including yourself. Since college I’ve been relocated back to my home state- but every fall I travel back up for a few days of re-centering myself (cant wait for my visit in October). I am so happy for you to experience the same things.

    Its really beautiful in Vermont, I can understand you like it very much there. You’re a lucky girl!

    I ate asparagus for the first time this spring and to my surprise I liked it too. The green and the white ones. Definitely going to eat that more often.

    looks like you have really been enjoying yourself outdoors! thanks for the holler, i really look forward to seeing your documentation! not enough people document their workouts, i LOVE to read them! asparagus is one of my favorite veggies actually. but it makes your pee smell funny :P proven fact! i think my favorite green veggie is either asparagus or broccoli.. ohh but i do love artichokes too. have a great day!

    I’m not big on asparagus. My favorite is broccoli. Love love LOVE it. And I hated it when I was a kid. Maybe I’ll grow to like asparagus someday.

    I really like asparagus, but I like it being a special occasion food.

    It looks like you are in a beautiful place. Oh, and the teeth chattering pool – that is a good thing. Just think, your body was burning calories like crazy to keep you warm! :-)

    I don’t like asparagus but if its hidden its ok. Favs are broccoli, or spinach…I got to make glycerin soap in chemistry class in high school it was fun! It does look pretty there, makes me almost miss new england….

    I love asparagus! I cook it in the oven with a tiny bit of olive oil, some salt and a few sprigs of rosemary! It’s seriously my favorite food…and that’s coming from a girl who once listed fried chicken as her favorite food!
